Where were you born?

A place called Ariki in Kurashiki-City.

What do you do for a living?

I run a ramen noodle cart "Shinakan." I've been doing this for three years now.

Why did you choose ramen?

I worked as a cook during my twenties and always thought I'd like to start something by the time I reached thirty. A food cart came to mind, so I went out and bought a cart for that purpose. The cart just happened to be equipped for cooking ramen noodles. I spent the next half year experimenting on my own. I set up a kitchen at my place and repeatedly asked friends for their comments on my ramen.

Why do you still run a cart?

It gives me more freedom. I'm of the impression that setting a permanent location would mean the end for me. I like the carefree feeling of a food cart.

What is your favorite dish?

Horumonyaki.

What is the best dish that you cook?

Boiled fish.

Where do you often go?

A bar called "Alasatta Detective Company." I would go there after work and drink until morning. Although I haven't been able to do so since I began opening my cart for lunch, too.

Do you like Kurashiki?

Yes, very much. Everyone is friendly. Whether you're at a bar or some kind of event, you can start a conversation with anyone you meet for the first time. You become friends before you even realize it.

When do you feel most happy?

When I come home and have a beer alone. My wife would normally be in bed at such hour.
